Cultivated in well-drained soils made up of clay and calcareous stone, it is influenced by breezes from the Adriatic Sea, which give this wine its particular flavour.
The name Pecorino bears witness to the link with the territory, a land of pastures and transhumance. Its grapes were particularly appreciated by sheep on their way from the mountains to the sea.
