In the Spumante version, Dacastello Ribolla Gialla reveals itself as a fresh, fragrant and full-bodied wine, with a vibrant colour and delicate aroma.
Off skins vinification, with clarification of the must. Temperature-controlled alcoholic fermentation with selected yeasts. Racking and fining in compliance with normal oenological procedures to stabilise the wine. Prise de mousse in pressurised tanks.

Dacastello an authentic wine with personality. In the 5th century, Cassiodorus recommended that the royal table be stocked with Veronese wines made from white grapes that were œvery suave and full-bodied, capable of expressing œclear purity, jovial candour and incredible suaveness.
