The secret is our mother yeast: our master pastry chef Giovanni takes care of it every day as a part of his family, as it is the only leavening agent we use in your pastries.

Ingredients of pistachio dough: Water, type 0 and type 1 soft wheat flours ground in Italy (UE), butter, sugar, egg yolk (category A), salt, yeast, pistachios, malt, Canicattì wildflower honey, Madagascar vanilla beans, 22% pistachio flavoured white chocolate chips, orange and lemon flavourings, chlorophyll, sunflower lecithin.
Pistachio Cream: 35% Pistachios, milk, oil, sugar, lecithin, vanilla.
Glaze: Chocolate glaze (cocoa butter, sugar, hydrogenated vegetable fat, milk, pistachios, vanilla). It may contain other nuts.

The name Pecorino bears witness to the link with the territory, a land of pastures and transhumance. Its grapes were particularly appreciated by sheep on their way from the mountains to the sea.
