The harvest began on late March. Maceration. prior alcoholic fermentation for 48
hours. at low temperature. Alcoholic fermentation with selected yeasts process at
controlled temperature between 23ºC to 26ºC . for 18 days. Aging in oak barrels for 8
months.
Aging potential: 4 years.

Legend has it that, upon his return from the Trojan War, the mythical Greek hero Diomedes sailed the Adriatic Sea until he reached the River Ofanto, where he anchored his ship with some stones from the Trojan fort.. Finding the place pleasant and fertile, Diomedes decided to plant the vine shoots he had brought with him as a souvenir from the distant city of Troy. Greatly appreciated by Emperor Augustus, Soave is a native wine with unique colour, austerity and persistence. The dark soil, made up of volcanic layers of tufa and limestone, make Soave D.O.C. Dacastello an authentic wine with personality. In the 5th century, Cassiodorus recommended that the royal table be stocked with Veronese wines made from white grapes that were œvery suave and full-bodied, capable of expressing œclear purity, jovial candour and incredible suaveness.
