Did you know that black olives are made, by putting green olives through an oxidation process?
The olives are washed and placed in the air stream air for approximately 24 hrs to oxidise the polyphenols the olives contains. This process turn green olives in black ones.
Use: Pitted, this olives are easy to use on salads, pizzas, pastas, bruschettas and pie fillings. Perfect addition to charcuterie board, Ideal for kids.

It is thought the name (it translates as "cheese on horseback") hails from a time when the caciocavello was traditionally transported slung over the saddles of soldiers.
