Chablis is the northernmost wine growing region in Burgundy. It’s actually closer to Champagne than much of the rest of Burgundy, because it is separated by the Morvan hills.
Chablis produces dry white wines made from Chardonnay, and is situated on ancient Jurassic soils that give its wines minerally and flinty accents.
Harvest by hand. Traditional vinification. Aged in oak barrels of 20 to 60% new oak for 8 to 15 months. The oak is mainly sourced from the Vosges region.

Domaine Marguerite Carillon Chablis is produced by traditional vinification, pneumatic pressing, fermentation in thermo-regulated stainless steel vats, ageing on fine lees 8-12 months.
Bouquet
White fruits with a nice minerality offering complexity.
Palate
The palate is well-balanced and the finish is lemon flavoured and fresh. Mineral.
Pairing
Perfect with hot oysters or fish in sauce, but also with white meats in sauce (veal, poultry). Sushi pairs perfectly with its minerality. Goat cheese, Blue cheese and Comté.
