Altitude
The vineyards flourish at altitudes between 50 and 150 meters above sea level. This elevation allows the grapes to develop their distinct flavours and aromas, enhancing the quality of Vin Santo Del Chianti DOC.
Soil Type
The hilly soils comprise sandy, calcareous-marly substrates, clayey schists, and sand enriched with pebbles or marl stones. This diverse soil composition plays a vital role in shaping the unique character of Vin Santo.
Alcohol Content
Vin Santo Del Chianti DOC boasts an alcohol content of 15% vol., making it a robust choice for enthusiasts of dessert wines.
Fermentation Process
To ensure a minimum sugar content of 26%, we carefully dry our selected grapes on mats in controlled environments. In early December, we de-stem and press the grapes, guaranteeing optimal flavour extraction.
Aging Process
The fermented must ages in traditional wooden containers known as Caratelli. With a capacity of no more than 5 hectolitres, these vessels facilitate slow fermentation and aging. This meticulous process imparts the refined and distinctive aroma for which Vin Santo is celebrated worldwide.
