Vin Santo Del Chianti DOC is produced with a blend of Trebbiano and Malvasia grapes.
Production area
Vin Santo is produced in the heart of Tuscany, it comes mainly from the hilly areas between Florence and Vinci. By Calappiano Vinary

Soil type
Comes from hilly soils consisting mainly of arenaceous, calcareous-marly substrates, clayey schists and sand with the presence of skeleton (pebbles or marl stones)
Alcohol Content
15% vol.
Fermentation
Carefully selected grapes are dried on mats in suitable and controlled rooms to ensure that the grapes reach a sugar content of not less than 26%. Then, in early December grapes are de-stemmed and pressed.
Aging
Finally, the must obtained during the fermentation, is placed in wooden containers with a capacity not exceeding 5 hectolitres. The container is called Caratelli, that is where a slow fermentation and aging takes place. This is giving Vin Santo it’s definitive refined and unique aroma for which this wine is known around the world.
Tasting notes
Vin Santo has intense amber colour, and a scent of dried fruit with hints of honey, it also is sweet and velvety on the palate.
Food matches
Goes well with dry pastries, Cantucci as well as soft biscuits and soft pastry desserts.
