The grapes, are vinified in our winery located in the immediate proximity of the vineyards. The maceration at controlled temperature not exceeding 25°C is continued for 8-10 days. The varieties are worked separately and remain divided until the bottling of the blend. The refining period is divided in 8-12 months in stainless steel silos for Primitivo, 8-12 months in oak barrel for Petit Verdot and after at least 12 months in a bottle.

Drinkability

The maturation is different for each grape type.  8-12 months in stainless steel silos for Primitivo. 8-12 months in oak barrel for Petit Verdot followed by at least 12 months in bottle.

Bouquet

Red fruits, floral notes, liquorice and strong balsamic notes.

Palate

Good freshness, pleasant tannins, long lingering final.

Pairing

Echoes Salento I.G.P. goes well with roasted red meats, game, dishes based on spices or truffles, hard and aged cheeses.
